Calabacitas
I had a huge lunch. HUGE!!!!
It was Calabacitas.

For those of you that don’t know. Calabacitas is a vegetable dish that has (this is subject to variation) corn, squash, green chili (New Mexico green chili no less) onions, garlic and salt to taste. It’s fantastic. I can’t get enough. Although I do have to go easy on the corn.
If you ever get a chance, try it. You’ll love it.
yummmmmm did you save me some?? i love this stuff!!
hey, how did you get that pict there?? can you give me some pointers??
I’m going to try this one for sure. Looks great, think I’ll use fresh corn, zucchini and green chili, maybe a little chopped fresh tomato. Thanks Sam.
Oh my gosh, that looks soooo good! I’ve never had it before, but think I’ll try making some this weekend.
Wholesome. Vegetarian. Low sodium. Low fat. What can be better?

There is an upload link below the box where you type your post. Click on browse. You’ll have a pop-up that says choose file. I usually have my pics saved on the desktop and upload from there. Choose the file, then click on open. The file will appear in the window that says “file”. Click on upload. You’ll have a set of options that appear after you upload. If it’s a huge picture you can choose thumbnail so it won’t be too big for your blog page. This can wreak havoc with your CSS so make sure the pic will fit in the text area of your blog. Then you can link the pic to it’s larger counterpart. You have a choice to open up in a new window or the same. I usually choose a new window so it doesn’t navigate away from my blog. The choices are file, page, and none. Choose none if the pic fits.
Clear as mud??? I’m so bad at explaining things.
